Description
This bottling is made from 8-14-year-old Cenizo agave plants found at lower elevations in the Valle de Florida in Durango, Mexico. It is milled using the manual axe technique and distilled in copper pot stills. Very terroir-driven, the nose is complex, and the palate has a clean finish. Dry and earthy texture, like the Durango desert dust. There are hints of sweetness on the nose reminiscent of fresh-baked maple sugar cookies. The palate has green, peppery notes of fresh chopped jalapeños with a subtle savory finish.
