Description
The Bonnet-Ponson Cuvée Perpétuelle Extra Brut is full-bodied yet finely cut, a grower Champagne that marries ripe orchard fruit with chalky drive. The nose opens with white peach, Mirabelle plum, and pear, layered with candied citrus peel and a subtle nutty, brioche-like autolytic note. On the palate, it is focused and vinous, with a small, persistent mousse and flavors of ripe stone fruit, citrus, and a hint of redcurrant, all carried by bright acidity and a distinctly saline, chalk-dusted mineral line. The finish is long, mouthwatering, and gently tense, combining citrus zest, biscuit, and wet stone, making this an excellent partner for oysters, crudo, or simply as a serious but joyful aperitif.
A blend of 40% of Pinot Noir, 30% of Chardonnay and 30% of Meunier, with 40% of this being reserve wines from a solera. Vines rooted in siliceous and calcareous sand from Chamery, Vrigny and Coulommes-la-Montagne. First fermentation in inox tank and neutral oak barrel, then aged on the lees for 8 months before blending with the reserve wine. Unfined, unfiltered, low sulfur. Aged in bottle for 4 years. 3-4 g/L dosage.
