San Francisco-based digestivo made in the tradition of alpine herbal liqueurs from Italy and France. The primary botanicals include yerba santa, anise, mint, cardamom, California bay leaf, tarragon, and clove which are incrementally added to a California-sourced neutral grape distillate for a single batch maceration. It then rests for a minimum of two months in stainless steel before it is sweetened with cane sugar and brought to proof. The result is a gorgeous herbal elixir, with a nose of green tea, bay leaf, and mint. The palate is filled with warm and bright yellow herbs, cinnamon, and anise. Cardamom blooms late, leading into big notes of mint on the finish.
