Description
100% Pinot from Raphaelle's own vines in Yonne. Planted in the early 2000s on limestone slopes, all south and southeast-facing with a rich, biodiverse surroundings. In the cellar, the Pinot sees a 100% whole cluster, 2-week ambient yeast fermentation and maceration. Aged for 12 months in barrels. SO2 added only after aging (0-15 ppm total SO2 at bottling). Coming from a well-exposed limestone hillside, this 2023 Pinot Noir expresses all the richness and finesse of its terroir. The vinification, mixing whole-cluster and destemmed bunches, magnifies its aromas of black cherry, redcurrant and a hint of licorice. On the palate, the 10-month aging in barrels gives it depth and an elegant structure.
