Domaine Tollot-Beaut is a fifth-generation family estate based in Chorey-lès-Beaune, with roots going back to the late 19th century when François Tollot first planted vines around the village. Over the decades, the family expanded their holdings into Savigny-lès-Beaune, Aloxe-Corton, and Beaune, and in 1921 they were among the first domaines in the Côte d’Or to bottle under their own label rather than selling everything to négociants, a pioneering move that helped define the modern grower-bottler model in Burgundy. Today the estate is run by cousins Nathalie, Jean-Paul, and Olivier Tollot, who continue a style that marries traditional Burgundian sensibilities with a thoughtful, sustainable approach to viticulture and a measured use of oak in the cellar.

The 2022 Chorey-lès-Beaune is a vivid, village-level Pinot Noir that showcases the domaine’s signature of ripe yet refreshingly classical fruit. The nose opens with bright red cherry and wild strawberry layered with violet, rose petal, and a touch of baking spice, underpinned by a subtle earthy note that nods to freshly turned soil. On the palate, it is medium-bodied and supple, with silky tannins, juicy red-fruited intensity, and a line of vibrant acidity that keeps everything lifted and precise. A hint of sweet spice and gentle stemmy savor (depending on the cuvée’s destemming choices in the vintage) lengthens the finish, making this a charming, approachable Burgundy that drinks beautifully now with a brief splash-decant but has the balance to develop more nuance over the next 5–7 years.
