This Cuvée Tradition is a blend of 70% Pinot Noir and 30% Chardonnay, fermented in stainless steel to preserve freshness, and goes through 100% malolactic fermentation. René Coutier practices organic farming techniques and uses no synthetic pesticides or herbicides to maintain soil health. The Cuvée Tradition is well-rounded and has a bit of everything for Champagne lovers and in just the right dose.
Aromas of toasted almond, golden apple and pear, and candied lemon follow through onto the palate with a moderately creamy texture and well-balanced acidity. There is a slightly salty nuance that serves as a nice counterpoint to the rich fruit, which never goes too heavy. It is a fine-tuned Grand Cru Champagne for $50 and is a staff and customer favorite.
