Description
"Audens" Franciacorta Dosaggio Zero is an elegant, absolutely dry Extra Brut with a distinct character and pure taste. It is a worthy representative of the region of Franciacorta, which produces the largest amount of Italian sparkling wines. "Audens" is made from Pinot Nero, Pinot Bianco, and Chardonnay grapes, grown according to sustainable farming principles that respect the quality of the terroir. The grapes are hand-harvested and gently pressed whole, followed by separation of the first and second fractions. Fermentation takes place in stainless steel tanks at a controlled temperature using selected yeasts, gradually reducing the temperature to 10°C to prevent malolactic fermentation. The wine is then bottled, corked, and sent to secondary fermentation and aging on the lees for a minimum of 24 months.
The nose is remarkably expressive, leading with crisp green apple and lemon zest, quickly followed by sophisticated herbal undertones of wild fennel, bergamot, and a touch of fresh dill. On the palate, the lack of dosage allows a striking, chalky minerality to take center stage, supported by a fine, persistent perlage that feels creamy yet energetic. It finishes with a long, saline snap and a hint of toasted almond, making it a vertical and uncompromising sparkling wine built for those who love a clean, razor-sharp finish.
