Filipa Pato has helped redefine Bairrada, working with traditional Portuguese varieties and biodynamic farming to craft wines with energy, clarity, and character. This Méthode Tradicional Rosé is her playful but precise take on sparkling wine. A most surprising sparkling rosé—fruity yet elegant, fun yet made in a serious manner. The three Bs here refer to Baga (80% of the blend) and Bical (20%, imparting floral notes, stone fruit flavors, and acidity), each hailing from the region of Bairrada (Portugal’s unsung wine region, but one of our favorites for elegant, restrained wines with moderate alcohol).
