For this limited release from Kaiyō, component whiskies were matured individually in five different wood types: PX Sherry, Oloroso Sherry, ex-bourbon, Mizunara, and French Oak. The whiskies were then blended before bottling without chill filtration. The result is a whisky that is layered and complex. On the nose, there are notes of citrus, melon, pear, vanilla, and hints of sandalwood. The palate doesn't disappoint with sweet notes of honey, lemon merengue, and caramel, balanced by peppery spice and a touch of orange peel. The finish lingers with notes of ripe red fruit, gingerbread, and a touch of incense.
