To me, rosé (be it from the picturesque seaside vineyards of Bandol or the cool, fog-laden hills of California’s Sonoma Coast), is a drink that transports you to another place with each thirst-quenching sip. It’s a wine associated with warm weather, picnics, happy times and travel. And when thinking of what to pair with whatever I may be cooking for dinner, it is hard to come up with a more suitable match than rosé. While I love the pale pink styles with a cheese board and some prosciutto or pâté, the brighter, raspberry-colored styles can really take on some heat and work quite well with paellas, Indian dishes and spicy BBQ! My favorite match for those middle of the road, peachy-pink styles are an open-faced smoked salmon tartine or a salad Niçoise! Whatever the time of day and with or without food, it is hard to beat a perfectly chilled glass of delicious rosé!
