The 2023 Henri Costal Vaillons is 100% Chardonnay from organically farmed, roughly 30‑year‑old vines on classic Kimmeridgian limestone in the Vaillons premier cru of Chablis. Fermented and aged with malolactic in three parts—about one‑third stainless steel, one‑third neutral 228 L barrels, and one‑third used 600 L demi‑muids—it marries a cool, zesty Chablis spine with a slightly riper, more generous texture. You can expect aromas in the vein of stone fruit and ripe orchard fruit with a touch of lemongrass, plus the region’s signature flinty, marine minerality and wet‑stone notes. On the palate it shows medium body, vibrant acidity, and a subtly creamy mid‑palate from the partial barrel élevage, finishing chalky, saline, and long.
