Description
COS was founded in 1980 by three friends, Giambattista (Titta) Cilia, Giusto Occhipinti and Cirino (Rino) Strano (COS is the acronym of their surnames.) They wanted to make wine like their Sicilian ancestors had from the area's main grapes, Frappato and Nero d'Avola. In time, they converted their vineyards to biodynamic farming and changed the face of the Cerasuolo di Vittoria DOCG.
In addition to their incredible reds, COS also dabbles in whites, and even makes an ‘orange’ wine they call, ‘Pithos’ whose name and winemaking style were inspired by the ancient cellar practices of the Greeks. This 100% Grecanico was aged in terracotta amphorae, or clay pots, just like the Greeks used, for seven months. It is a fascinating experience to drink and one of the better, more pleasingly drinkable 'orange' wines we've encountered.
