Description
When Vin de Soif was first conceptualized, even before the name came about, the idea was to highlight wines that were fresh, low alcohol and easy to drink. We are working with our growers to produce wines from various regions that speak honestly about where they come from and hold true to the mantra of simply, reliably delicious. They will always lean towards low alcohol and fresh, bright acidity. The winemaking will always be low intervention and the farming clean. They will hopefully both quench and instill that most sacred of desires: thirst. Tastes very much like Northern Rhône Syrah. Medium minus tannin, great acidity, dark fruit (loads of blackberry), with violet floral notes and black pepper.
VARIETIES: 92% Syrah, 5% Grenache, 3% Cinsault
CLASSIFICATION: Côtes du Rhône
VINEYARDS: Estate vineyards of La Ferme du Mont. Limestone slopes, clay, and sand. Miocene era.
FARMING: Certified (Ecocert) Organic
WINEMAKING: 70% destemmed. Gravity-fed tank filling without pumping or crushing. Fermentation starts spontaneously, with a quick onset due to low initial sugar, followed by a gentle, slow maceration in concrete tanks. One racking is performed, and CO2 is retained to delay sulfur addition until the final stage, just before bottling.
