This very crisp and refreshing sparkling wine from the Jura region of France is a blend of 75% Chardonnay, 20% Pinot Noir and 5% Savagnin. The color is pale straw and the nose exudes vibrant aromas of fresh red apples with a slight yeasty note. The light to medium bodied palate continues with flavors of juicy, crunchy red apple and Asian pear which ease onto the very clean finish of excellent, high acidity. This wine shows a lot of polish and the character of Champagne for about half the price. Only 500 cases were made. Xavier Reverchon represents the fourth generation of his family that has been farming vineyards for over 100 years in the small village of Poligny in the Jura. The six hectare estate has been farmed organically for 26 years and is planted to Pinot Noir and Chardonnay as well as two of the main grapes of the Jura, Savagnin and Trousseau. Here is how he made the wine, “After harvest, the clusters are sorted rigorously to ensure quality. Xavier de-stems the grapes, then allows them to macerate at cool temperatures for 3 to 4 days for ideal aromatics to develop. Only the free-run juice is vinified, so that tannins are kept to a minimum. Vinification takes place on indigenous yeasts at low temperatures in stainless steel tanks. The wine is racked off its lees before undergoing malolactic fermentation in tanks, followed by a cold filtration. The bottles are riddled and disgorged by hand and topped off with a liqueur de tirage. Dosage is 7g/L.”
