Highland Park is the most northern distillery in Scotland, located in the Orkney Island. Orkney was the home to illicit distillation in late 1700s. Thus it is never possible to give an exact date for a distillery. However it is believed that Highland Park Distillery was built in 1798 by Magnus Eunson. Highland Park continues to honor its Viking roots with the name of their expressions such as Magnus, Svein, Einar, Sigurd and so on.
In 1937 the Highland Distillers Co bought the distillery and in 1979 they decided to release single malts instead of giving the malt away for blending which was a turning point in the history of the distillery. In 1999 Edrington Group tookover the distillery and it continued to improve.
Highland Park is still partially using floor malting procedure (traditional single malt whisky production method) for their peated barley which is peated by the peat collected from the Hobbister Moor.
Highland Park 12 is a great all round whisky among 12 year old single malt Scotch whiskies. Especially with heather honey character in this bottle, every aspect becomes delicate and delicious. A sublime briny profile with mild peat, vegetal and floral notes.
Highland Park 12 would make a great choice if you are looking for smokiness with a balanced palate of fruity and floral feeling improved by a touch of brine and coastal sense.
