While there is a nice handful of smaller production, very limited (read expensive) Sherries now imported into the States, Emilio Lustau continues to be the gold bearer for reliable, quality-driven Sherry wines from Jerez, Spain. Manzanilla is a dry Fino style Sherry that was aged in the American oak cask Solera system under flor (the layer of yeast that develops in Fino and Manzanilla wines to protect them from contact with the air and thus, oxidation) "in the cool, humid, salty air in the port of Sanlúcar de Barrameda." This Papirusa was aged for about five years and is a classic example of the dry Manzanilla style with notes of salty, briny sea air and a crisp, dry, tangy and clean finish. Manzanillas are very light and thus great for sipping as an aperitif or as a nice alternative to white wine when you're looking for something with a little added nuance to  pair with seafood.
