Our family cyder-making business was established in 1728 by Clement Chevallier. He planted the orchards at Aspall Hall in Suffolk. The Chevallier family still live and work among Clement’s orchards and today, Aspall is run by the eighth generation of the family.
This brilliantly clear yellow cider shines in the glass as big bubbles shoot to the top and form a thick, soft white head. Musty ripe apples balloon in the aroma, with rustic barnyard scents giving the bouquet a deep earthiness. Like the aroma, sweet, ripe apple notes hit the tongue before the fruit’s sour side emerges, while soft smoky flavors work through the sourness and smooth out the edges. A dynamic transition unfolds as the drink flows back: Sweet at first, the cider turns funky before finishing super-dry.
