COS was founded in 1980 by three friends, Giambattista (Titta) Cilia, Giusto Occhipinti and Cirino (Rino) Strano (COS is the acronym of their surnames.) They wanted to make wine like their Sicilian ancestors had from the area's main grapes, Frappato and Nero d'Avola. In time they converted their vineyards to biodynamic farming and changed the face of the Cerasuolo di Vittoria wines. This 2017 Nero d'Avola went through spontaneous fermentation on the skins with indigenous yeasts and was aged briefly in cement vats and bottle before release. On the nose, the wine has beautiful aromas of cherry, mature plum and licorice. The taste has good correspondence with the nose showing those same flavors of cherry and plum. The tannins are very soft and the wine has well-balanced acidity with a persistent finish.
