Consistently delicious with a classic spritzy character (amplified when poured from high into the glass as it's done in the Basque Country) refreshing lemon lime flavors and ample, thirst quenching acidity on the finish, it is ideal for a nice sunny day. Or, as an aperitif wine to start the evening off with a bang, or paired with fresh oysters and other crustaceans. Year in and year out, it is one of our favorite and best-selling Spanish white wines. The Txueka Etxaniz family has been cultivating vines and making Txakoli for generations. Historical records dating back to 1649 mention an early descendant of the family, Domingo de Etxaniz, growing vines in the heart of Getaria. The current generation of the family led the movement to establish Getariako Txakolina as a Denominación de Origen or DO in 1989. From all accounts, theirs is the most expansive and stunning estate in the appellation which sits right along the hills of the Cantabrian Coast in Spain's Basque Country. They have 35 hectares of vines planted mostly (90%) to the white grape, Hondarabbi Zuri and 10% to the red grape, Hondarabbi Beltza. The grapes are grown on steep sloping hills on tall arbors, as opposed to traditional vines. In other words, they form a trellis above that is reached by standing as opposed to bending over. There are many other producers in the region but Txomin Etxaniz is the gold standard. Txakoli is the perfect summer sipper with its telltale spritzy quality and clean, lime citrus, incredibly refreshing acidity.
