The Cotat family has been making Sauvignon Blanc in Sancerre for over 150 years and owns some of the most prime rows of vines in the famous sloping vineyards of La Grande Côte, Les Culs de Beaujeu and Les Monts Damnés. François picks his organically farmed grapes a full week after everyone else in the area which adds a richness and overall complexity to his legendary, extremely age-worthy wines. Of the three main wines, this Culs de Beaujeu is typically the fruitiest, although that would be in terms of French wines, not a typical California based Sauvignon which might put off too much fruit. Here, it's all about white fruits and vibrant citrus flavors followed by the classic honey tinged finish. We only get a small allocation of these wines so get them while you can!
