Sylvain Pataille has produced a highly unusual rosé wine that is akin to a truly great white wine. It is made for keeping, and has a salmon-pink appearance, aromas of fresh red berries and flowers. The palate is particularly full bodied, aromatic and long in the mouth. This wine is produced from Pinot Noir grapes cultivated in limestone soils according to biodynamic and (certified) organic principles. It is vinified naturally in tanks with native yeasts. The wine is matured for two years in demi-muid barrels and in one-year-old casks. It is then left to age in the cellar for a year.
