Sacred Thirst Selections is the smart importer who brings these wines into the Bay Area and has this to say about them, "Domaine du Collier was established in 1999 by Antoine Foucault and Caroline Boireau. The domaine is located in the commune of Brézé within the Loire Valley appellation of Saumur Champigny. The estate is comprised of 6.5 hectares of vines dedicated to Cabernet Franc and Chenin Blanc. As a proponent of natural viticulture and winemaking, Antoine uses no chemical fungicides or fertilizers on the vines, and all harvesting is done by hand. In the cellar all wines are fermented via indigenous yeasts, and with minimal intervention. Currently there are four wines produced with a total annual production of approximately 1200 cases." Antoine learned how to make wine at the venerable Saumur domaine, Clos Rougeard so it's safe to say he knows what he's doing in the cellar! In contrast to the wines of Clos Rougeard, Antoine's style is just a bit more wild, surprising and unexpected - in a good way, according to Sacred Thirst partner, Chris Deegan. In addition to his minimal use of new oak (maybe one in five barrique), Antoine elects for very long elevage/aging in the cellar before bottling and releasing his wines to market. These wines are already high on many collector's list and won't last very long.
