This Brut Reserva is a blend of 50% Xarel·lo, 30% Macabeo and 20% Parellada that was aged for 24 months on the lees before disgorgement. With the very low 6 grams per liter of dosage this is a very dry Cava and one of the most refined and elegant we have tasted in a very long time.
The Casanova family has been farming the same land in Penedes since the 13th century. Jordi and his daughter, Maria, are the 35th and 36th generation “living on the property since the time of the Moorish occupation when the neighboring hillsides served as the final outpost for the Catalans.” The modern day winery was established in 1929 and is still where the Casanovas produce their range of seven different Cavas and half a dozen still whites and red blends. The 300-hectare estate includes 110 hectares of vineyards that are in transition to organic certification. They are located in the Conca de l’Anoia sub zone in northern Penedes, the same neighborhood as Raventos and Recaredo, two of Spain’s premier Cava producers. The area is considered to be one of the best for growing Xarel-lo, Macabeo and Parellada for Cava production thanks to its higher elevation and cooler microclimate that makes for higher acidity in the grapes.
