We love to support Saracina because the Fetzer family was one of the original producers in California to embrace organic farming in their vineyards, way back before it was the cool thing to do. John Fetzer continues to do so across his Mendocino farms and makes great wines from them, especially whites like his un-oaked Chardonnay and this delicious Sauvignon Blanc. The grapes for this 2016 come from his estate Atrea vineyards where his Sauvignon Blanc is planted to the musque clone which adds an extra aromatic level to the wine, as well as the dry-farmed Lolonis Vineyard, which was planted in 1945 and is recognized as the oldest Sauvignon Blanc in California. John notes those grapes provide the minerality and austerity "we strive for in our rendition of Sauvignon Blanc." After being whole cluster pressed, John barrel fermented the wine in neutral Burgundian oak and aged it on its lees with bi-weekly batonage for three months. He describes it as follows, "pale lemon, the aromatics exude old vine character, with lime zest, wet steel and a briny, oyster shell note. The palate is chiseled and zesty, with the addition of Musque and lees contact adding weight to the nervy core." He recommends pairing it with "any seafood on the half shell or mild white fish."
