COS was founded in 1980 by three friends, Giambattista (Titta) Cilia, Giusto Occhipinti and Cirino (Rino) Strano (COS is the acronym of their surnames.) They wanted to make wine like their Sicilian ancestors had from the area's main grapes, Frappato and Nero d'Avola. In time they converted their vineyards to biodynamic farming and changed the face of the Cerasuolo di Vittoria wines. This 2016 Frappato went through spontaneous fermentation on the skins with indigenous yeasts and was aged briefly in cement vats and bottle before release. It reveals a darker red fruit tone than in the past with flavors of black cherry along with a lovely note of dried herbs. It finishes with great acidity and feels so very Sicilian in character with a friendly brightness to go along with the semi-firm tannins.
