Winemaker Fredi Torres clearly has a way with wine because who else could combine 68% Carignan with 28% Merlot and 14% of the white grape, Picapoll or Picpoul as it is known in France, to make such a tasty, engaging red?! Apparently, he likes to add a percentage of white grapes to his red blends for extra lift and acidity. He certainly figured out the right combination in going with 30% whole cluster fermentation followed by six months of aging in 60% stainless steel and 40% old, large foudres (oak casks). The nose offers both red and white floral aromas with a pinch of white pepper to go along with red and black fruits of sweet raspberry, tart cranberry, juicy blackberry and black plum skin. The medium-bodied palate is ripe yet definitely not over-ripe or forward thanks to that lift from the Picapoll. According to Fredi it shows "fruit with balsamic notes of petunias, violets, roses, wild carnation, sage and madroño and zarzaparrila flower from the pure Mediterranean landscape." The wine ends with great acidity and might even show better with a bit of a chill.
