Pere Mata has become one of our very favorite cava producers and this delightful sparkling rosé demonstrates why! Comprised of 35% Macabeu, 20% Xarel-lo, 20% Paralleda and 25% Monastrell, or Mourvèdre as the Spanish call it, the color is a pretty pale, rose gold that’s almost blush in its light intensity. The nose is very fragrant with floral spring garden aromas along with red apple skin and orange zest scents. The palate is light-bodied and lively with flavors of white peach, under ripe strawberry, subtle tart red berry and a hint of pink grapefruit. The wine ends with a citrus edge at the finish along with a cool, slatey, wet rock mineral note. This is a Cava with incredible acidity and crispness that, without an added dosage, is remarkably not austere or tart in any way. Enjoy on its own or with any of your favorite savory tapas!
