“The name of this cuvée is short for “les Valnons Froid Cul”—a famous and seemingly cold hill in Aÿ. This wine embodies a very unique and rare experience: tasting true Blanc de Blancs from one of the best situated slopes in Aÿ, a grand cru famous for rich, articulate pinot noir. This wine delivers clear mineral verve with distinctive richness and intense texture.” The Valnons Grand Cru Vineyard is another one of those that the Pouillons farm biodynamically and is also planted in clay and limestone soil with a southern exposure. It was vinified in 100% neutral French barrique with a low 5 grams per liter dosage, which qualifies it as an Extra Brut. Another beautifully balanced Champagne from R. Pouillon et Fils with a higher but still very low dosage than the Brut Nature Les Blanchiens. Gorgeous silky texture and a long persistent finish with panache!
R. Pouillon et fils was founded in 1947 when Roger Pouillon decided to try to make his own wine from the fruit of his tiny parcel in the village of Mutigny he had been selling to négotiants. In 1964, Roger was joined by his son, James, (thus the "et fils" or "and son") who became the winemaker. By 1967 their total vineyard holdings only added up to one hectare spread across the three villages of Mutigny, Mareuil-sur-Aÿ and Tauxières. By 1987 the estate expanded to a whopping 5 hectares including two in the Côtes des Blanc, enabling them to produce Grand Cru Chardonnay. Roger passed away in 1993 and his grandson, James' son, Fabrice, joined the company along with his wife, Elodie, who both run the domaine today. They sustainably farm all their vines which now total 7.5 hectares and include Pinot Noir, Chardonnay and Pinot Meunier and they started experimenting with biodynamic farming in isolated plots in 2003. They no longer sell off any of their estate fruit and produce seven different Premier and Grand Cru bottlings including vintage Extra Brut, vintage Brut Nature, Solera Brut, Brut Rosé and these two vintage cuvées.
